Ingredients: For the chicken Salad
1) 3 cups shredded lettuce
2) 2 cups shredded red cabbage
3) 2 cups shredded chicken or thinly sliced chicken breast, boiled and
seasoned with salt and black pepper
4) 1/2 cup jarred mandarin oranges, drained
5) 1 instant ramen packet, crushed (added flavors are not necessary)
6) 1/2 cup shredded carrot
7) 1/3 cup sliced green onions
8) 1/4 cup sliced almonds
For the dressing chicken Salad
1) 3 tbsp. rice wine vinegar
2) 2 tbsp. honey
3) 1 tbsp. sesame oil
4) 1 tbsp. hoisin sauce
5) 2 tbsp. soy sauce
6) 1 tsp. ginger, well minced
7) 1 clove garlic, minced
8) 1/4 cup vegetable oil
Step 1- Take a large bowl. Put together lettuce, red cabbage, chicken(shredded or sliced), mandarin oranges, crushed ramen oodles(with no added flavor), carrots, green onions, and sliced almonds in it. Toss the ingredients well and the salad is ready for its dressing.
Step 2- To make the salad dressing, in a bowl, whisk together vinegar, honey, sesame oil, hoisin sauce, soy sauce, ginger, and garlic paste. Now slowly drizzle in vegetable oil in it and keep whisking. Continue whisking until all the ingredients are emulsified.
Step 3 – Plate the salad and drizzle the dressing all over. Toss everything together. Your Chinese style chicken mandarin salad is ready to be Enjoyed for a subtle summer lunch or dinner.
