8. 500gm cooked and diced boneless chicken

1. 1 cup whole-grain farro

8. 1 tbsp mustard

How to prepare:

Step 1 :

In a medium pan, combine farro, vegetable broth, salt, and bay leaf. Bring the mixture to a boil and then reduce to a simmer and let it all cook. Stir occasionally until the farro is tender and no broth remains. It will take bout 30 minutes. When the farro is cooked, transfer it to a large bowl and let it cool.

Step 2 :

 Next fry the shallots. Take a small pan over medium heat. Combine oil and shallots. When the shallots begin to bubble, reduce heat to medium-low and cook. Stir occasionally until shallots are crisp and golden; about 15 to 20 minutes would be enough. Then remove shallots from oil avoiding the oil and place on a paper-towel covered plate and season with salt. Let the remaining oil cool down.

Step 3 : 

Now to make the salad dressing take a medium bowl, add the cooled olive oil with vinegar, mustard, and honey. Mix everything well and season with salt and pepper.

Step 4 –

Finally, it’s time to assemble the salad. Combine the cooked farro, the crispy fried shallots, arugula, apple, parmesan cheese, basil leaves, parsley, and pecans. Mix the ingredients well. This salad should look like a homogeneous mixture of all the ingredients. Lastly, drizzle the dressing over salad and toss it well to coat. 1. 500 gm shrimp, peeled and deveined

9. 1/2 cup mayonnaise
